Garlic Scape Pesto

  • 2 C garlic scapes

  • 1 C fresh garden basil

  • 1/2 C Italian flat leaf parsley

  • 1/4 C olive or avocado oil

  • 1/2 t sea salt

  • cheese is optional - but always yummy

Steam scapes until tender, about 6 minutes. Cool and whiz in food processor until blended, add herbs & whiz some more. Then drizzle the oil in, blend and finish with salt.

Top it on eggs, pasta, meats. Always good and giving. Holds well and can be refrigerated for several days.
