Just remember, you’ll want to make sure to grow a dent corn variety, since that’s the kind for grinding into meal.
Fresh Ground Polenta Porridge
Grind 1 C dent corn to a course ground meal
Add the ground dent corn to 3 Cups boiling water.
Add 1 teaspoon salt
Boil on medium heat, stirring often, until water has been absorbed. About 15 minutes. (If your grind is a bit course, expect longer cooking time). Once you’ve got the thickness you like, remove from heat, stir in 2T organic butter & 1/2 cup grated cheese. Stir to blend. Salt to taste.
Pour polenta into single serve bowls & serve with a smile!
